How often does my kitchen extract system need cleaning?

Professional Kitchens

Canopy extractor fans in professional kitchens may need cleaning more frequently.

Kitchen extract in professional environments

If you work in catering, it is likely that there is a canopy extraction system installed in your kitchen. Like home kitchen extracts, these are designed to get rid of the build up of heat, steam and grease in the room.

The filters in the canopy protect against grease deposition, however smaller particles will inevitably pass through into the extract ductwork system. When these deposits accumulate over time, they potentially pose hygiene and fire safety risks.

Generally kitchen staff may be cleaning the kitchen canopy on a regular basis, but the large, professional canopies need to be cleaned by experts, it is also important that the extract ductwork system is professionally cleaned in order to meet TR19 standards.

The frequency of kitchen extract ductwork cleaning all depends on the number of hours per day the kitchen is operational. All kitchen extract systems require cleaning on a minimum of an annual clean, but the continuous use, fast food, high grease contaminated extract systems may require a monthly deep clean to remove the fire risk.

Apart from improving the hygiene levels of a kitchen, having the kitchen extract ductwork cleaned professionally can also prevent fire hazards. It is therefore essential that you include the kitchen extract system as part of your regular maintenance schedule, as if there is a fire and lack of access to the ductwork is the cause, the building owner could be found guilty of negligence and may face prosecution under the Health & Safety Act.

Domestic Kitchens

Kitchen extracts in the home need cleaning at least every month.

When to clean your kitchen extract

It is recommended that you clean your kitchen extract thoroughly at least once a month. Doing it more frequently will obviously keep the dirt to a minimum and make cleaning an easier process.

You will be able to tell that your extract needs cleaning as the extractor fan will not work as efficiently and will also become noisier. This is due to the fact that it will be blocked up with dirt and grease.

How to clean your kitchen extract

Before cleaning your kitchen extract, make sure that it has been switched off at the mains. You then need to make a cleaning solution by mixing some mild detergent with warm water.

To clean the kitchen extractor fan, simply dip a soft cleaning cloth into the solution you have made and wipe it over the extractor fan. This will remove any dust, dirt and grime. If dirt is tough to remove, you may want to use an old toothbrush instead to give it a good scrub.

There should be a removable filter on your extractor fan. This can be washed in the sink using hot soapy water. Some filters are also suitable for washing in the dishwasher.

Please keep in mind that if you are using charcoal filters, they will need to be changed every four to six months (depending how much they’re used). These are not suitable for home cleaning.

Once you’ve cleaned the fan, you will also need to clean your extractor hood. Make a fresh cleaning solution with detergent and water and use a soft cloth to clean the hood. The type of filter you have inside the hood may vary. Below we’ve listed the most common filter types and how to clean them properly:

  • Paper filter – These are disposable and should be replaced at least every month.
  • Metal filter – Wash metal filters in the sink using hot soapy water. Some are dishwasher safe.
  • Sponge filter – Wash in the sink using warm soapy water. These will need replacing every five to six washes.
  • Carbon filter – These cannot be washed and should be changed every six months.

Cleaning your kitchen extract on a regular basis will help to prolong its life and keeping your kitchen clean and hygienic.
